Skegness Blue Cheese Scones



Recipe for Skegness Blue Cheese Scones;


25 grams butter at room temperature

200grams Self Raising flour

100 grams Skegness blue 

150mls buttermilk

Pinch of Salt

Pinch of Cayenne Pepper

Pinch of Mustard Powder



Heat the oven to 220 degrees centigrade

Sieve the flour into a bowl , add mustard, cayenne pepper and salt.

Rub in the butter until it resembles breadcrumbs

Break up the Skegness blue into small pieces and add and rub into the breadcrumb mixture

Add the buttermilk { but leave a tablespoon to brush with before baking}

 Gently knead to form a soft dough

Turn onto a floured surface and roll out into thickness of about 2cms

Use a 6cm fluted cutter and cut the out the scones

Place the scones on a baking sheet, lined with parchment paper.

Brush with saved buttermilk

Bake for approx 15 minutes, or until slightly golden.

Lovely warm on their own, with bacon and our Sweet Tomato and Chili Chutney or serve as a side with soup.
